DESCRIPTION:

Half ‘N Half Euro Grain is designed for wholesale bakeries. This base is comprised of all natural sours, grains and seeds and is used to produce hearty bread with distinct European flavor.

  2. Recommended at 50% usage level based on flour weight.

INGREDIENTS

Rye Flour, Whole Wheat Flour, Sesame Seeds, Flaxseed, Wheat Bran, Yellow Corn Meal, Dried Rye Sourdough, Salt, Barley Flakes, Oat Flakes, Millet and 2% or Less of Each of the Following: Wheat Gluten, Caramel Color, Ground Fennel Seed, Ground Coriander.

PROCEDURE:

Mix: Low (1st speed) 2 minutes and 10 min. medium speed.

Dough Temp: 80-82°F

Rest: 20-30 minutes. Scale and shape.

Proof: 20-30 minutes

Floor Time: 10-15 minutes

Bake: 420°F for 5 min. with steam and 390°F for 30 minutes.
