PROCEDURE:

Mix 2 min on low speed & 15 min on med speed or to development

Dough Temp: 80-82°F

Floor Time: 15 minutes

Scale, round, rest 10 minutes and shape

For No-time- Proof 50-60 minutes and bake or retard at least 12 hours, proof 20-30 min & bake at 380°F for 26-30 min w/20 seconds of steam in rack oven.
