Big ’49er is an innovative product that offers a unique combination of sour conditioners to produce a zesty and flavorful California type sour bread.

  2. Makes uniform products on a short time dough basis in all climates and seasons unlike temperamental wet sours
  3. Eliminates the mess and high labor cost of wet sours
  4. Extends shelf life of finished products and reduces stales


Wheat Flour, Salt, Fumaric Acid, Malted Barley Flour (Contains Wheat), Malt Powder (Dried Corn Syrup, Barley Malt Extract) and 2% or Less of Each of the Following: Acetic Acid, Lactic Acid.

Mix 2 minutes on low speed

Mix 12 mins on high speed or until full developed

Dough Temp: 72-75°F

Floor Time: 0-10 minutes

Proof: as desired

Bake: 400°F with steam until golden brown

Optional: add 2% sugar for faster proof, more volume and darker crust color
