Rye Freeze 2.0 is a conditioner specially designed for frozen rye bread products.

INGREDIENTS

Rye Flour, Salt, Dextrose, Ground Caraway Seed, Enriched Wheat Flour (Wheat Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Sodium Stearoyl Lactylate (SSL) and 2% or Less of Each of the Following: Mono- and Diglycerides, Soybean Oil, Acetic Acid, Malted Barley Flour, Lactic Acid, Natural Flavor, Onion Powder, Ascorbic Acid (Vitamin C), Enzymes (Contains Wheat).

PROCEDURE:

Mix 2 minutes on low speed and 8 minutes on high Dough Temp: 78-80°F. Floor Time: 0-5 minutes Proof Time: 30-45 minutes Bake: 375°F with steam for 1st 10 minutes of bake Total Bake Time: 45 minutes
