Gluten Free Bread & Bun Mix is a gluten free complete mix which can be used to produce white pan bread, hamburger buns, hotdogs, and hoagie rolls.

Tapioca Starch, Rice Flour, Bread & Roll Blend (Rice Flour, Corn Flour, Corn Starch, Rice Starch, Psyllium Husk, Xanthan Gum, Carboxymethocellulose), Potato Starch, Cellulose, Egg Whites, Organic Sugar and 2% or Less of Each of the Following: Methylcellulose, Natural Flavor, Salt, Salt Blend (Sodium Chloride, Potassium Chloride, Magnesium Chloride, Magnesium Sulfate), Rice Bran, Lactic Acid, Enzymes.

Add oil, egg white and dry ingredients to bowl, then add water. Mix for 2 minutes on 1st speed, scrape the paddle and bowl, then mix for 1 minute

Dough Temp: 67°F.

Scale 22 oz. for 9″ pan bread

Proof at 95°F, RH 85% for 40 minutes

Bake: rack oven at 420°F for 10 minutes

Steam: 5 seconds

Increase temperature to 450°F, bake 40 minutes
